- 1 cup All-Purpose Flour (Topping)
- 1 cup Rolled Oats (Old-Fashioned)
- 1/2 cup Light Brown Sugar, packed (Topping)
- 1/4 cup Granulated Sugar (Topping)
- 1/2 tsp Ground Cinnamon (Topping)
- 3/4 cup (1.5 sticks) Unsalted Butter, very cold, cubed
- 1/2 tsp Kosher Salt (Topping)
Instructions:
- Preheat Oven: Set the oven to 375°F (190°C). Lightly grease a 9x9 inch square baking dish or a 2.5 quart oval dish.
- Prep Fruit and Combine Filling: Peel, core, and chop apples into uniform 1/2-inch pieces. In a large bowl, toss the prepared apples and cranberries with the filling ingredients (sugars, 2 Tbsp flour, lemon juice, spices, salt). Mix thoroughly until the fruit is evenly coated. Set aside.
- Combine Dry Ingredients for Topping: In a separate medium bowl, whisk together the 1 cup flour, rolled oats, both topping sugars, 1/2 tsp cinnamon, and Kosher salt.
- Incorporate Butter: Add the cold, cubed butter to the dry topping ingredients. Use your fingertips, a pastry blender, or two knives to quickly rub the butter into the flour mixture until large, pea-sized crumbs form. Do not overmix.
- Assemble the Dish: Pour the prepared fruit filling mixture into the greased baking dish, spreading it into an even layer. Evenly distribute the cold crumble mixture over the fruit.
- Bake: Place the dish in the preheated oven. Bake for 45–50 minutes, or until the topping is deep golden brown and the fruit filling is actively bubbling around the edges. If the topping browns too quickly, loosely tent the dish with foil.
- Cool and Serve: Remove the crisp from the oven. Allow it to rest for at least 15 minutes before serving. This resting time is vital, as it allows the fruit juices to thicken properly.
