Ingredients:
- cup packed ripe Mango flesh (for puree)
- oz Tequila Blanco (100% Agave)
- oz Fresh Lime Juice
- oz Orange Liqueur (Cointreau recommended)
- oz Mango Puree
- oz Agave Nectar (or simple syrup, adjust to taste)
- Coarse Salt or Tajín seasoning (for rim)
- Ice Cubes
Instructions:
- Prepare the Mango Puree: Peel and dice the fresh mango. Blend until completely smooth. Strain through a fine-mesh sieve if you prefer zero fibre/lumps. Set aside.
- Prepare the Glass Rims: Run a lime wedge around the rim of your serving glasses. Dip the outer edge of the rim into a shallow plate of coarse salt (or Tajín). Fill the glasses with fresh ice.
- Measure Ingredients: In the cocktail shaker, combine the Tequila, fresh Lime Juice, Orange Liqueur, Mango Puree, and Agave Nectar.
- Chill and Dilute: Fill the shaker two-thirds full with quality ice. Seal tightly.
- Shake Vigorously: Shake hard for about 15–20 seconds until the shaker is frosty on the outside. This is essential for proper chilling and dilution.
- Strain and Serve: Strain the mixture through the shaker’s strainer directly over the fresh ice in your prepared glass.
- Garnish: Garnish each glass with a fresh lime wedge or wheel. Serve immediately.
