  • 1 3/4 cups (420ml) buttermilk
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, separated (yolks and whites)
  • 1 teaspoon (5ml) vanilla extract

Instructions:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk, oil, egg yolks, and vanilla extract.
  4. In another clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
  5. Pour the wet ingredients (yolks mixture) into the dry ingredients and gently whisk until just combined. Do not overmix; a few lumps are okay.
  6. Gently fold the whipped egg whites into the batter until just incorporated.
  7. Pour the appropriate amount of batter (as per your waffle iron instructions) onto the preheated waffle iron. Cook until golden brown and crispy.
  8. Serve waffles immediately with your favorite toppings.
