- 1 3/4 cups (420ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 2 large eggs, separated (yolks and whites)

Instructions:

- In another clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
- Pour the wet ingredients (yolks mixture) into the dry ingredients and gently whisk until just combined. Do not overmix; a few lumps are okay.
- Gently fold the whipped egg whites into the batter until just incorporated.
- Pour the appropriate amount of batter (as per your waffle iron instructions) onto the preheated waffle iron. Cook until golden brown and crispy.
