Ingredients:

  • 1 cup (200g) dried chickpeas, soaked overnight
  • 1 medium yellow onion, roughly chopped (approx. 150g)
  • 4 cloves garlic, minced (approx. 12g)
  • 1 cup (packed) fresh parsley, roughly chopped (approx. 30g)
  • 1/2 cup (packed) fresh cilantro, roughly chopped (approx. 15g)
  • 2 tablespoons all-purpose flour (20g)
  • 1 tablespoon tahini (15g)
  • 1 teaspoon ground cumin (3g)
  • 1 teaspoon ground coriander (3g)
  • 1/2 teaspoon baking powder (2g)
  • 1/4 teaspoon cayenne pepper (or to taste) (1g)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (3g)
  • Vegetable oil, for frying (approx. 2 cups / 500ml)
  • 4 burger buns
  • 1/2 cup hummus (120g)
  • 1/2 cup tzatziki sauce (120g)
  • 1 tomato, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • Lettuce leaves

Instructions:

  1. Drain the soaked chickpeas thoroughly.
  2. Combine chickpeas, onion, garlic, parsley, cilantro, flour, tahini, cumin, coriander, baking powder, cayenne pepper, salt, and pepper in a food processor. Pulse until a coarse mixture forms.
  3. Transfer the falafel mixture to a bowl, cover, and refrigerate for at least 1 hour.
  4. Form the chilled mixture into 4 equal-sized patties.
  5. Heat vegetable oil in a deep frying pan or pot to 350°F (175°C). Carefully add the falafel patties and fry for 3-4 minutes per side, or until golden brown and crispy.
  6. Remove the fried falafel patties with a slotted spoon and place them on paper towels to drain excess oil.
  7. Lightly toast the burger buns.
  8. Spread hummus on the bottom bun, top with lettuce, tomato slices, cucumber slices, red onion slices, and the fried falafel patty. Drizzle with tzatziki sauce and top with the other half of the bun.
  9. Serve your delicious falafel burger immediately!
