Ingredients:

  • cup (227g) Unsalted Butter, softened to cool room temperature
  • cups (480g) Icing Sugar (Powdered Sugar), sifted
  • teaspoons (10 ml) High-quality Vanilla Extract or Paste
  • –4 tablespoons Heavy Cream or Milk
  • /4 teaspoon (1.25g) Fine Sea Salt

Instructions:

  1. Ensure the butter is perfectly softened. Sift the icing sugar into a large bowl and set aside.
  2. Place the softened butter into the mixing bowl. Beat on medium speed until the butter is very pale, light, and fluffy (about 3-4 minutes). Scrape down the sides thoroughly.
  3. With the mixer on the lowest speed, slowly add the sifted icing sugar, one cup at a time, waiting a few seconds between additions to prevent a sugar cloud.
  4. Once all the sugar is incorporated, increase the speed to medium and beat for an additional 2 minutes. The mixture should look dry and crumbly. Scrape down the bowl again.
  5. Pour in the vanilla extract and the salt. Add 3 tablespoons of heavy cream/milk.
  6. Beat the frosting on medium-high speed for a full 3-5 minutes until it is noticeably lighter in colour and silky smooth in texture.
  7. If the frosting is too stiff for spreading, add the remaining tablespoon of liquid, a teaspoon at a time, until the desired consistency is achieved.
  8. Taste and adjust vanilla or salt if necessary. Use immediately or cover tightly for later use.
