Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 1/2 cup artichoke hearts, roughly chopped
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • 1/2 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 lb sliced turkey breast
  • 4 ciabatta rolls or baguettes
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves (optional)
  • Olive oil for drizzling

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, chopped spinach, artichoke hearts, mayonnaise, minced garlic, lemon juice, salt, and pepper. Mix until smooth and well combined. Set aside.
  2. Preheat the oven to 375°F (190°C) or heat a grill pan on medium. Slice the ciabatta rolls or baguettes in half and drizzle with olive oil. Place on a baking sheet and toast in the oven for approximately 5 minutes until slightly crispy.
  3. Once the bread is toasted, spread a generous layer of the spinach artichoke mix on each half. Layer the sliced turkey breast evenly over one side of each sandwich. Sprinkle mozzarella cheese on top of the turkey, and add fresh basil if using.
  4. Place the sandwiches back under the broiler or in the grill pan for another 3-5 minutes until the cheese is melted and bubbly.
  5. Remove from heat, press the sandwich halves together, and let cool for a minute. Slice in half diagonally and serve warm.
