Ingredients:

  • cup (2 sticks) unsalted butter, softened to cool room temperature
  • cups confectioners' sugar, sifted (plus more for thinning)
  • teaspoons pure vanilla extract
  • /4 teaspoon fine sea salt
  • –4 tablespoons cold whole milk or heavy cream

Instructions:

  1. Prepare Ingredients: Ensure the butter is perfectly softened (cool to the touch but yields to gentle pressure). Sift all confectioners' sugar into a separate bowl to remove any lumps.
  2. Cream the Butter: In the stand mixer bowl fitted with the paddle attachment, beat the softened butter on medium speed until it is pale, light, and fluffy (about 3–4 minutes). Scrape down the sides well.
  3. Incorporate Sugar Gradually: Reduce the mixer speed to low. Slowly add the sifted confectioners' sugar, one cup at a time, mixing completely after each addition before adding the next.
  4. Add Flavour and Salt: Once all sugar is incorporated, mix in the vanilla extract and salt.
  5. Adjust Consistency: Increase the mixer speed to medium-high. While mixing, slowly drizzle in the cold milk or cream, one tablespoon at a time, until the frosting reaches a smooth, spreadable consistency that holds soft peaks.
  6. Final Whip: Beat the frosting on medium-high speed for 2–3 minutes until it is visibly lighter in colour and thoroughly aerated.
  7. Use or Store: Use the American Buttercream Frosting immediately on your baked goods, or cover tightly for storage.
