Ingredients:
- cups ripe Mango chunks (fresh or frozen)
- oz fresh Lime Juice (for puree)
- oz Agave Nectar or Simple Syrup (to taste)
- oz Blanco Tequila (100% Agave)
- oz Cointreau or Triple Sec (Orange Liqueur)
- oz additional fresh Lime Juice (for shaking)
- Ice cubes
- Tbsp Coarse Salt (Kosher or Sea Salt) for rim
- Lime Wedges for garnish
Instructions:
- Prepare the Rim: Spread the coarse salt on a small plate. Moisten the rim of your serving glasses with a lime wedge, then gently invert the glass into the salt, coating only the outer edge.
- Create the Mango Base: Combine the mango chunks, 1.5 oz fresh lime juice, and agave/syrup in a high-speed blender. Blend until completely smooth.
- Strain (Optional): For an ultra-silky texture, press the mango puree through a fine-mesh sieve into a clean bowl, discarding any fibrous pulp.
- Combine Ingredients (Shaken Method): In a cocktail shaker filled two-thirds with ice, combine 2 oz Blanco Tequila, 0.5 oz Cointreau, and 1 oz fresh lime juice for one serving.
- Add Mango & Shake: Add 2-3 oz of the prepared mango puree into the shaker. Seal tightly and shake vigorously for 20 seconds until the shaker is frosty cold.
- Serve: Fill the prepared, salt-rimmed glasses with fresh ice. Double-strain the cocktail mixture into the glasses. If desired, top with a splash of soda water.
- Garnish: Garnish each glass with a fresh lime wheel or wedge before serving immediately.
