Ingredients:
- 2 1/2 cups (300g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (240ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups of your choice: Blueberries (fresh or frozen), chocolate chips, chopped nuts, etc.
Instructions:
- Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
- Gently fold in your chosen add-ins (blueberries, chocolate chips, nuts, etc.).
- Fill each muffin cup about 2/3 full using an ice cream scoop or large spoon.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Rotate the muffin tin halfway through baking for even browning.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
