Ingredients:
- 2 oz (60 ml) Aged Jamaican Rum (Appleton Estate 12 Year is highly recommended)
- 1 oz (30 ml) Fresh Lime Juice (approx. 2 limes)
- ¾ oz (22 ml) Orange Curaçao (Pierre Ferrand Dry Curaçao preferred)
- ½ oz (15 ml) Orgeat Syrup (high-quality, almond-based)
- ¼ oz (7.5 ml) Simple Syrup (equal parts sugar and water, heated until dissolved and then cooled)
- Garnish: Lime wedge, Pineapple wedge, Mint sprig (optional)
Instructions:
- Fill your Double Old Fashioned or Tiki glass with ice.
- Juice the limes to yield 1 oz of fresh juice.
- In a cocktail shaker, combine the aged rum, lime juice, orange curaçao, orgeat syrup, and simple syrup.
- Fill the shaker with ice.
- Shake well for 15-20 seconds until thoroughly chilled.
- Strain the mixture into your ice-filled glass.
- Garnish with a lime wedge, pineapple wedge, and a mint sprig (if desired).
- Serve immediately and enjoy responsibly.
