Ingredients:
- 1 ½ cups (192g) all-purpose flour
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 ¼ cups (300ml) milk
- 1 large egg, lightly beaten
- 3 tablespoons (42g) unsalted butter, melted
- 1 teaspoon vanilla extract
- ¾ cup (130g) semi-sweet chocolate chips
Instructions:
- Whisk together flour, baking powder, salt, and sugar in a large mixing bowl.
- In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients and whisk until just combined. Don’t overmix; a few lumps are okay.
- Gently fold in the chocolate chips until evenly distributed.
- Preheat a lightly oiled griddle or non-stick skillet over medium heat. Test with a drop of water; it should sizzle.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and bubbles start to form on the surface. Flip and cook for another 1-2 minutes.
- Serve warm with your favorite toppings.
