Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 ¼ cups (300ml) milk
  • 1 large egg, lightly beaten
  • 3 tablespoons (42g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ¾ cup (130g) semi-sweet chocolate chips

Instructions:

  1. Whisk together flour, baking powder, salt, and sugar in a large mixing bowl.
  2. In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients and whisk until just combined. Don’t overmix; a few lumps are okay.
  4. Gently fold in the chocolate chips until evenly distributed.
  5. Preheat a lightly oiled griddle or non-stick skillet over medium heat. Test with a drop of water; it should sizzle.
  6. Pour ¼ cup of batter onto the hot griddle for each pancake.
  7. Cook for 2-3 minutes per side, or until golden brown and bubbles start to form on the surface. Flip and cook for another 1-2 minutes.
  8. Serve warm with your favorite toppings.
