Ingredients:
- 1 large yellow onion (approximately 8 ounces), peeled and thinly sliced
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- Pinch of freshly ground black pepper (optional)
- 1/4 teaspoon of sugar (optional)
Instructions:
- Peel and thinly slice the onion. Aim for even slices for consistent cooking.
- Heat the olive oil in a large skillet over medium heat. Ensure the fat is shimmering, but not smoking.
- Add the sliced onions to the skillet in a single layer. Avoid overcrowding.
- Sprinkle with salt and pepper (if using).
- Cook, stirring occasionally at first, then more frequently as the onions soften and begin to brown.
- Reduce the heat to medium-low once the onions start to brown to prevent burning.
- For deeper caramelization, continue cooking over low heat, stirring frequently, for an additional 10-15 minutes, or until the onions are a rich golden-brown color and very soft. If adding sugar do so in this step.
- Deglaze the pan with a small amount of water or stock at the very end, scraping up any browned bits from the bottom of the pan.
- Once the onions are cooked to your liking, remove the skillet from the heat and let them cool slightly before using.
