Ingredients:

  • 1 large yellow onion (approximately 8 ounces), peeled and thinly sliced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • Pinch of freshly ground black pepper (optional)
  • 1/4 teaspoon of sugar (optional)

Instructions:

  1. Peel and thinly slice the onion. Aim for even slices for consistent cooking.
  2. Heat the olive oil in a large skillet over medium heat. Ensure the fat is shimmering, but not smoking.
  3. Add the sliced onions to the skillet in a single layer. Avoid overcrowding.
  4. Sprinkle with salt and pepper (if using).
  5. Cook, stirring occasionally at first, then more frequently as the onions soften and begin to brown.
  6. Reduce the heat to medium-low once the onions start to brown to prevent burning.
  7. For deeper caramelization, continue cooking over low heat, stirring frequently, for an additional 10-15 minutes, or until the onions are a rich golden-brown color and very soft. If adding sugar do so in this step.
  8. Deglaze the pan with a small amount of water or stock at the very end, scraping up any browned bits from the bottom of the pan.
  9. Once the onions are cooked to your liking, remove the skillet from the heat and let them cool slightly before using.
