Ingredients:

  • 1 lb lean ground beef (90% lean)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups broccoli florets, bite-sized
  • 1 medium carrot, julienned or shredded
  • 2 stalks green onions, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp cornstarch mixed with 1 tbsp water

Instructions:

  1. Heat the skillet over medium-high heat. Add the ground beef and diced onion, cooking and breaking the meat apart until browned and onions are translucent (about 5-7 minutes). Drain any excess fat.
  2. Stir in the minced garlic and grated ginger, cooking for 60 seconds until fragrant.
  3. Add the broccoli florets and shredded carrots. Stir-fry for 3-4 minutes until vegetables are tender-crisp and vivid green.
  4. Pour in the soy sauce, honey, rice vinegar, and sesame oil. Stir constantly for 1-2 minutes as the liquid reduces.
  5. Slowly stir in the cornstarch slurry and cook until the sauce transforms into a velvety, glossy glaze that clings to the beef.
  6. Remove the skillet from heat.
  7. Garnish with sliced green onions.
  8. Serve immediately over rice or noodles.
