Ingredients:

  • 2 racks of baby back ribs (about 2.5-3 lbs or 1.1-1.4 kg total)
  • 1 tablespoon of olive oil (15 ml)
  • 2 tablespoons of brown sugar (30 g)
  • 1 tablespoon of smoked paprika (15 g)
  • 1 tablespoon of garlic powder (8 g)
  • 1 tablespoon of onion powder (8 g)
  • 1 teaspoon of kosher salt (5 g)
  • 1 teaspoon of ground black pepper (5 g)
  • 1 teaspoon of cayenne pepper (optional, for heat) (5 g)
  • 1 cup of store-bought or homemade barbecue sauce (240 ml)
  • 2 tablespoons of apple cider vinegar (30 ml)

Instructions:

  1. Remove the silver skin from the back of the ribs and rinse and pat dry.
  2. In a small bowl, combine dry rub ingredients. Rub the olive oil onto the ribs, then coat thoroughly with the dry rub. Optionally, marinate for 30 minutes.
  3. Preheat the oven to 275°F (135°C). Place the ribs on a baking sheet lined with foil and cover tightly with another layer of foil. Bake for 2.5 to 3 hours until tender.
  4. Remove the ribs from the oven and discard the top foil. Mix the barbecue sauce with apple cider vinegar and brush the sauce generously over the ribs.
  5. Return to the oven uncovered and bake for an additional 30 minutes or broil for a few minutes until caramelized.
  6. Let the ribs rest for 10 minutes before slicing and serve with extra sauce if desired.
