Ingredients:
- 2 racks of baby back ribs (about 2.5-3 lbs or 1.1-1.4 kg total)
- 1 tablespoon of olive oil (15 ml)
- 2 tablespoons of brown sugar (30 g)
- 1 tablespoon of smoked paprika (15 g)
- 1 tablespoon of garlic powder (8 g)
- 1 tablespoon of onion powder (8 g)
- 1 teaspoon of kosher salt (5 g)
- 1 teaspoon of ground black pepper (5 g)
- 1 teaspoon of cayenne pepper (optional, for heat) (5 g)
- 1 cup of store-bought or homemade barbecue sauce (240 ml)
- 2 tablespoons of apple cider vinegar (30 ml)
Instructions:
- Remove the silver skin from the back of the ribs and rinse and pat dry.
- In a small bowl, combine dry rub ingredients. Rub the olive oil onto the ribs, then coat thoroughly with the dry rub. Optionally, marinate for 30 minutes.
- Preheat the oven to 275°F (135°C). Place the ribs on a baking sheet lined with foil and cover tightly with another layer of foil. Bake for 2.5 to 3 hours until tender.
- Remove the ribs from the oven and discard the top foil. Mix the barbecue sauce with apple cider vinegar and brush the sauce generously over the ribs.
- Return to the oven uncovered and bake for an additional 30 minutes or broil for a few minutes until caramelized.
- Let the ribs rest for 10 minutes before slicing and serve with extra sauce if desired.
