Ingredients:
- 2 cups mixed salad greens (arugula, spinach, and romaine)
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers (red, yellow, & green), diced
- 1 cup cucumber, diced
- 1 cup shredded carrots
- ½ cup purple cabbage, shredded
- 1 medium mango, diced
- ½ cup blueberries
- ¼ cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt and pepper, to taste
Instructions:
- Wash and dry all vegetables and fruits.
- Use a sharp knife to chop the greens, tomatoes, bell peppers, and cucumber into bite-sized pieces.
- Use a box grater or food processor to shred the carrots and cabbage.
- Carefully peel and dice the mango into small cubes.
- In a large mixing bowl, combine all the prepared salad ingredients.
- In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey/maple syrup, salt, and pepper until emulsified.
- Drizzle the dressing over the salad and toss gently until all ingredients are well coated.
- Plate the salad and enjoy!
