Ingredients:

  • 2 cups mixed salad greens (arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers (red, yellow, & green), diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • ½ cup purple cabbage, shredded
  • 1 medium mango, diced
  • ½ cup blueberries
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper, to taste

Instructions:

  1. Wash and dry all vegetables and fruits.
  2. Use a sharp knife to chop the greens, tomatoes, bell peppers, and cucumber into bite-sized pieces.
  3. Use a box grater or food processor to shred the carrots and cabbage.
  4. Carefully peel and dice the mango into small cubes.
  5. In a large mixing bowl, combine all the prepared salad ingredients.
  6. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey/maple syrup, salt, and pepper until emulsified.
  7. Drizzle the dressing over the salad and toss gently until all ingredients are well coated.
  8. Plate the salad and enjoy!
