Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ cup buttermilk
- 2 large eggs
- 4 tablespoons unsalted butter, melted
- 1 pound ground beef or turkey
- ½ cup diced onion
- 1 clove garlic, minced
- 1 teaspoon chili powder
- ½ teaspoon cayenne pepper (optional)
- 1 cup shredded cheddar cheese
- ¼ cup fresh cilantro, chopped
- Vegetable oil for frying

Instructions:
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, salt, cumin, and paprika.
- In another bowl, whisk together buttermilk, eggs, and melted butter.
- Pour wet ingredients into dry ingredients; mix until just combined. Cover and let rest in the fridge for 1 hour.
- In a skillet over medium heat, sauté diced onions until translucent (about 5 minutes). Add garlic; sauté for 1 minute.
- Stir in the ground meat, chili powder, and cayenne; cook until browned and fully cooked (10-12 minutes).
- Mix in cheese and cilantro; season with salt and pepper. Let cool slightly.
- Roll out the dough on a floured surface to about ½ inch thick. Cut out doughnuts using a doughnut cutter.
- In a deep pot, heat oil to 350°F (175°C). Carefully drop in doughnuts, frying until golden brown on both sides (about 2-3 minutes each).
- Remove and drain on paper towels.
- Fill a piping bag with the meat filling. Poke a hole in the side of each doughnut and carefully pipe in the filling.
- Top with optional garnishes and serve immediately.
