Ingredients:
- 1 medium sweet potato (8-10 ounces / 225-280g)
- Optional: Olive oil or cooking spray
- Optional: Pinch of sea salt
Instructions:
- Wash the sweet potato thoroughly under running water. Pat dry with a paper towel.
- Using a fork or sharp knife, pierce the sweet potato multiple times all over – about 6-8 times.
- If desired, lightly coat the sweet potato with olive oil or cooking spray. Sprinkle with a pinch of sea salt.
- Place the sweet potato on a microwave-safe plate. Microwave on high for 5 minutes.
- Carefully remove the sweet potato from the microwave. Test for doneness by squeezing it gently. If it's still firm, continue microwaving in 1-minute intervals until tender.
- Let the sweet potato rest for a minute or two before handling. This helps it steam and become even more tender.
- Slice open and top with your favorite toppings.
