Ingredients:
- 1 lb (450g) lean ground beef
- 2 medium (500g) sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 medium (110g) yellow onion, diced
- 1 large (120g) red bell pepper, diced
- 3 cloves (15g) garlic, minced
- 1 tbsp (15ml) olive oil
- 1 tsp (5g) smoked paprika
- 1 tsp (5g) ground cumin
- ½ tsp (2.5g) chili powder
- 1 tsp (6g) kosher salt
- ½ tsp (3g) black pepper
- ¼ tsp (1g) crushed red pepper flakes
Instructions:
- Dice the sweet potatoes. Cut them into uniform 1/2 inch cubes. Note: This ensures even cooking across the whole batch.
- Heat the oil. Get your 12 inch cast iron skillet over medium high heat.
- Sear the beef. Add the ground beef in an even layer. Leave it undisturbed for 3-4 mins until a mahogany crust forms. Break it apart and cook until no longer pink.
- Sauté the aromatics. Add the diced onion and red bell pepper. Cook for 3 mins until the onion becomes translucent.
- Cook the tubers. Stir in the diced sweet potatoes. Cook for 8-10 mins, stirring occasionally, until tender when poked with a fork.
- Add the spices. Stir in the minced garlic, smoked paprika, ground cumin, chili powder, salt, and black pepper.
- Finish the flavor. Toss for 2 mins until spices are fragrant and potatoes are well coated.
- Final touch. Stir in the red pepper flakes and remove from heat.
