Ingredients:

  • 1 lb (450g) lean ground beef
  • 2 medium (500g) sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 medium (110g) yellow onion, diced
  • 1 large (120g) red bell pepper, diced
  • 3 cloves (15g) garlic, minced
  • 1 tbsp (15ml) olive oil
  • 1 tsp (5g) smoked paprika
  • 1 tsp (5g) ground cumin
  • ½ tsp (2.5g) chili powder
  • 1 tsp (6g) kosher salt
  • ½ tsp (3g) black pepper
  • ¼ tsp (1g) crushed red pepper flakes

Instructions:

  1. Dice the sweet potatoes. Cut them into uniform 1/2 inch cubes. Note: This ensures even cooking across the whole batch.
  2. Heat the oil. Get your 12 inch cast iron skillet over medium high heat.
  3. Sear the beef. Add the ground beef in an even layer. Leave it undisturbed for 3-4 mins until a mahogany crust forms. Break it apart and cook until no longer pink.
  4. Sauté the aromatics. Add the diced onion and red bell pepper. Cook for 3 mins until the onion becomes translucent.
  5. Cook the tubers. Stir in the diced sweet potatoes. Cook for 8-10 mins, stirring occasionally, until tender when poked with a fork.
  6. Add the spices. Stir in the minced garlic, smoked paprika, ground cumin, chili powder, salt, and black pepper.
  7. Finish the flavor. Toss for 2 mins until spices are fragrant and potatoes are well coated.
  8. Final touch. Stir in the red pepper flakes and remove from heat.
