Ingredients:
- 4 ears of fresh sweet corn (or 3 cups canned or frozen corn, thawed)
- 150g (5 oz) feta cheese, crumbled
- 1 medium red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped (optional)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions:
- Boil or grill the corn until cooked (about 5-10 minutes). Allow to cool slightly then cut kernels off the cob.
- Dice the red bell pepper and finely chop the red onion and herbs.
- In a large mixing bowl, combine corn, bell pepper, onion, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until well combined.
- Drizzle dressing over the salad mixture and toss gently to combine.
- Fold in crumbled feta cheese carefully.
- Adjust seasoning if necessary, and serve immediately or chill for 15-20 minutes for flavors to meld.
