Ingredients:

  • 4 ears of fresh sweet corn (or 3 cups canned or frozen corn, thawed)
  • 150g (5 oz) feta cheese, crumbled
  • 1 medium red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped (optional)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions:

  1. Boil or grill the corn until cooked (about 5-10 minutes). Allow to cool slightly then cut kernels off the cob.
  2. Dice the red bell pepper and finely chop the red onion and herbs.
  3. In a large mixing bowl, combine corn, bell pepper, onion, parsley, and mint.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until well combined.
  5. Drizzle dressing over the salad mixture and toss gently to combine.
  6. Fold in crumbled feta cheese carefully.
  7. Adjust seasoning if necessary, and serve immediately or chill for 15-20 minutes for flavors to meld.
