- 4 medium ears of corn, husked (approx. 680 grams)
- 2 tablespoons olive oil (approx. 30 ml)
- Sea salt to taste
- 1/2 cup mayonnaise (approx. 120 grams)
- 1/2 cup crumbled feta cheese (approx. 75 grams)
- 1 tablespoon lime juice (approx. 15 ml)
- 1 teaspoon chili powder or smoked paprika (approx. 5 grams)
- Fresh cilantro, chopped, for garnish (optional)
- Lime wedges
Instructions:
- Husk the corn, removing all silk.
- Brush the corn with olive oil and sprinkle lightly with salt.
- Preheat the grill to medium-high heat.
- Place the corn on the grill, turning every few minutes, until charred and tender (about 10-15 minutes).
- In a mixing bowl, combine mayonnaise, feta cheese, lime juice, and chili powder; mix well.
- Once the corn is grilled, remove it from the heat.
- Generously coat each ear of corn with the creamy topping.
- Garnish with chopped cilantro (if using) and serve with lime wedges.
