Ingredients:

  • 4 medium ears of corn, husked (approx. 680 grams)
  • 2 tablespoons olive oil (approx. 30 ml)
  • Sea salt to taste
  • 1/2 cup mayonnaise (approx. 120 grams)
  • 1/2 cup crumbled feta cheese (approx. 75 grams)
  • 1 tablespoon lime juice (approx. 15 ml)
  • 1 teaspoon chili powder or smoked paprika (approx. 5 grams)
  • Fresh cilantro, chopped, for garnish (optional)
  • Lime wedges

Instructions:

  1. Husk the corn, removing all silk.
  2. Brush the corn with olive oil and sprinkle lightly with salt.
  3. Preheat the grill to medium-high heat.
  4. Place the corn on the grill, turning every few minutes, until charred and tender (about 10-15 minutes).
  5. In a mixing bowl, combine mayonnaise, feta cheese, lime juice, and chili powder; mix well.
  6. Once the corn is grilled, remove it from the heat.
  7. Generously coat each ear of corn with the creamy topping.
  8. Garnish with chopped cilantro (if using) and serve with lime wedges.
