Ingredients:
- 1 baguette, sliced into ½-inch thick rounds
- 2 tablespoons olive oil
- Pinch of sea salt
- 1 pound fresh strawberries, hulled and sliced
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- ¼ teaspoon freshly ground black pepper
- 8 ounces fresh ricotta cheese
- 1 tablespoon lemon zest
- 2 tablespoons chopped fresh basil leaves
- Optional: a drizzle of good quality balsamic glaze for serving
Instructions:
- Gently wash and slice the strawberries. Combine with balsamic vinegar, honey, and black pepper in a bowl. Allow to macerate for 10 minutes.
- Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and sprinkle with sea salt. Arrange on a baking sheet and bake for 5-7 minutes, or until lightly golden brown and crisp.
- While the baguette toasts, combine the ricotta cheese, lemon zest, and chopped basil in a bowl. Mix well.
- Spread each toasted baguette slice with a generous spoonful of the ricotta mixture. Top with the marinated strawberry mixture.
- Drizzle with extra balsamic glaze, if desired. Serve immediately, as the toast may soften over time.
