Ingredients:

  • 4 cups all-purpose flour (500 g)
  • 2 tsp instant yeast (6 g)
  • 1/2 cup sugar (100 g)
  • 1 tsp baking powder (4 g)
  • 1 cup warm water (240 mL)
  • 2 Tbsp vegetable oil (30 mL)
  • Pinch of salt
  • 1 lb ground pork (450 g)
  • 3 Tbsp soy sauce (45 mL)
  • 2 Tbsp oyster sauce (30 mL)
  • 1 Tbsp sesame oil (15 mL)
  • 2 tsp grated ginger (10 g)
  • 2 cloves garlic, minced
  • 1/4 cup green onions, finely chopped (25 g)

Instructions:

  1. In a large bowl, combine flour, sugar, yeast, baking powder, and salt.
  2. Gradually add warm water and vegetable oil, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place in a greased bowl, cover with a cloth, and let rise for 1 hour or until doubled in size.
  5. In another bowl, mix the ground pork with soy sauce, oyster sauce, sesame oil, ginger, garlic, and green onions until well combined.
  6. Allow the filling to marinate while the dough rises.
  7. Once the dough has risen, punch it down and divide into 12 equal pieces.
  8. Roll each piece into a ball, then flatten into a disc (about 3 inches in diameter).
  9. Place a spoonful of filling in the center, fold the edges over, and pinch to seal.
  10. Prepare the steamer lined with parchment or cabbage leaves.
  11. Place buns in the steamer, leaving space between each.
  12. Steam for 15-20 minutes over boiling water until fluffy and cooked through.
