Ingredients:
- 4 medium orange bell peppers
- 1 tablespoon olive oil
- 1 cup cooked quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- ¼ cup shredded cheese
- Chopped fresh cilantro or parsley (optional)
Instructions:
- Preheat the oven to 375°F (190°C). Slice the tops off the peppers and scoop out the seeds. Carve spooky faces into each pepper using the knife.
- Heat olive oil in a skillet over medium heat. Add cooked quinoa, black beans, corn, cumin, paprika, and season with salt and pepper. Stir to combine and heat through.
- Spoon the filling into each carved pepper, packing it down gently. Sprinkle cheese on top of each stuffed pepper.
- Place the stuffed peppers in a baking dish and add a splash of water at the bottom to create steam. Cover with foil and bake for 20 minutes; then remove the foil and bake for another 10 minutes until the peppers are tender and cheese is melted.
- Remove from the oven, garnish with cilantro or parsley if desired, and enjoy the spooky feast!
