Ingredients:

  • 4 medium orange bell peppers
  • 1 tablespoon olive oil
  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • ¼ cup shredded cheese
  • Chopped fresh cilantro or parsley (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Slice the tops off the peppers and scoop out the seeds. Carve spooky faces into each pepper using the knife.
  2. Heat olive oil in a skillet over medium heat. Add cooked quinoa, black beans, corn, cumin, paprika, and season with salt and pepper. Stir to combine and heat through.
  3. Spoon the filling into each carved pepper, packing it down gently. Sprinkle cheese on top of each stuffed pepper.
  4. Place the stuffed peppers in a baking dish and add a splash of water at the bottom to create steam. Cover with foil and bake for 20 minutes; then remove the foil and bake for another 10 minutes until the peppers are tender and cheese is melted.
  5. Remove from the oven, garnish with cilantro or parsley if desired, and enjoy the spooky feast!
