Ingredients:

  • 1 large sweet potato (about 8-10 ounces / 225-285 grams), scrubbed clean
  • Optional: 1 teaspoon olive oil (5 ml) or other oil
  • Optional: Pinch of sea salt and black pepper
  • Optional Savory Toppings:
  • 1/4 cup (60 ml) cooked black beans, rinsed
  • 1/4 cup (60 ml) shredded cheddar cheese
  • 2 tablespoons salsa
  • 1 tablespoon sour cream or Greek yogurt
  • Chopped cilantro, to taste
  • Optional Sweet Toppings:
  • 1 tablespoon unsalted butter (15 grams), softened
  • 1/2 teaspoon ground cinnamon (2.5 ml)
  • 1 tablespoon brown sugar or maple syrup (15 ml)
  • Pinch of nutmeg

Instructions:

  1. Wash the sweet potato thoroughly. Pierce it several times all over with a fork.
  2. Optional: Rub the potato with olive oil and sprinkle with salt and pepper.
  3. Place the potato on a microwave-safe plate. Microwave on high for 5-10 minutes, depending on the size.
  4. Check for doneness by squeezing the potato gently. It should be soft and give easily. If not, continue microwaving in 1-minute intervals until tender.
  5. Let the potato cool slightly before handling.
  6. Prepare your desired toppings (optional).
  7. Slice the sweet potato open lengthwise. Fluff the flesh with a fork. Top with your chosen toppings and enjoy immediately!
