Ingredients:
- 1 large sweet potato (about 8-10 ounces / 225-285 grams), scrubbed clean
- Optional: 1 teaspoon olive oil (5 ml) or other oil
- Optional: Pinch of sea salt and black pepper
- Optional Savory Toppings:
- 1/4 cup (60 ml) cooked black beans, rinsed
- 1/4 cup (60 ml) shredded cheddar cheese
- 2 tablespoons salsa
- 1 tablespoon sour cream or Greek yogurt
- Chopped cilantro, to taste
- Optional Sweet Toppings:
- 1 tablespoon unsalted butter (15 grams), softened
- 1/2 teaspoon ground cinnamon (2.5 ml)
- 1 tablespoon brown sugar or maple syrup (15 ml)
- Pinch of nutmeg
Instructions:
- Wash the sweet potato thoroughly. Pierce it several times all over with a fork.
- Optional: Rub the potato with olive oil and sprinkle with salt and pepper.
- Place the potato on a microwave-safe plate. Microwave on high for 5-10 minutes, depending on the size.
- Check for doneness by squeezing the potato gently. It should be soft and give easily. If not, continue microwaving in 1-minute intervals until tender.
- Let the potato cool slightly before handling.
- Prepare your desired toppings (optional).
- Slice the sweet potato open lengthwise. Fluff the flesh with a fork. Top with your chosen toppings and enjoy immediately!
