Ingredients:

  • 2 large eggs
  • 1/4 cup milk (whole or 2%)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of grated nutmeg
  • 5 ounces frozen chopped spinach, thawed and squeezed dry
  • 4 ounces feta cheese, crumbled
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg until well combined.
  3. Ensure the thawed spinach is completely squeezed dry. Press out as much liquid as you possibly can.
  4. Add the squeezed spinach, crumbled feta, olive oil, and Parmesan cheese to the egg mixture. Stir well to combine.
  5. Spoon the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  6. Bake for 15-20 minutes, or until the bites are golden brown and set in the middle. A toothpick inserted into the center should come out clean.
  7. Let the bites cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
