Ingredients:
- 2 large eggs
- 1/4 cup milk (whole or 2%)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Pinch of grated nutmeg
- 5 ounces frozen chopped spinach, thawed and squeezed dry
- 4 ounces feta cheese, crumbled
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
- In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg until well combined.
- Ensure the thawed spinach is completely squeezed dry. Press out as much liquid as you possibly can.
- Add the squeezed spinach, crumbled feta, olive oil, and Parmesan cheese to the egg mixture. Stir well to combine.
- Spoon the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for 15-20 minutes, or until the bites are golden brown and set in the middle. A toothpick inserted into the center should come out clean.
- Let the bites cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
