Ingredients:
- 1 lb (450g) sirloin steak, thinly sliced against the grain
- 1 tablespoon (15ml) soy sauce
- 1 tablespoon (15ml) cornstarch
- 1 teaspoon (5ml) sesame oil
- 1/2 teaspoon (2.5ml) ground ginger
- 1/4 teaspoon (1.25ml) black pepper
- 1 lb (450g) fresh or dried lo mein noodles (or spaghetti as a substitute, cooked al dente)
- 2 tablespoons (30ml) vegetable oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 inch (2.5cm) piece of ginger, minced
- 4 cups (1L) of choi sum or bok choy, roughly chopped
- 1/4 cup (60ml) soy sauce
- 2 tablespoons (30ml) hoisin sauce
- 1 tablespoon (15ml) rice vinegar
- 1 tablespoon (15ml) brown sugar
- 1 teaspoon (5ml) sesame oil
- 1/2 teaspoon (2.5ml) chili garlic sauce (or sriracha), optional
Instructions:
- Marinate sliced beef with soy sauce, cornstarch, sesame oil, ginger, and pepper. Set aside.
- Cook lo mein noodles according to package directions until al dente. Drain and set aside. (If using spaghetti, cook until al dente)
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add bell peppers, onion, garlic, and ginger. Sauté until vegetables are tender-crisp, about 5 minutes.
- Add marinated beef to the skillet and stir-fry until cooked through and browned, about 3-5 minutes.
- In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, and chili garlic sauce (if using).
- Add cooked noodles and sauce to the skillet. Toss to coat evenly.
- Serve immediately, garnished with sesame seeds or chopped green onions (optional).
