Ingredients:

  • 4 small baguettes
  • 8 large eggs
  • ¼ cup (57g) pâté
  • ¼ cup (57g) mayonnaise
  • 1 cucumber, thinly sliced
  • ¼ cup (40g) pickled carrots
  • ¼ cup (40g) pickled daikon radish
  • ¼ cup fresh cilantro leaves
  • 2 tablespoons soy sauce
  • Optional: Jalapeño slices

Instructions:

  1. Lightly toast the baguette halves until warm and slightly crispy.
  2. Carefully slice each baguette lengthwise, without cutting all the way through.
  3. Spread pâté on one half of each baguette and mayonnaise on the other.
  4. Layer cucumber slices, pickled carrots, pickled daikon, and cilantro leaves onto the bread. Add jalapeño, if using.
  5. Fry the eggs to your liking (over easy, medium, or hard). Season lightly with salt and pepper (optional).
  6. Place two fried eggs in each baguette.
  7. Drizzle soy sauce over the eggs. Serve immediately and enjoy!
