Ingredients:
- 1 sheet (14.1 oz / 400g) frozen puff pastry, thawed
- 8 oz / 225g brie cheese, rind removed and cut into ½-inch cubes
- 1/2 cup / 60g fresh or frozen cranberries, roughly chopped
- 1 large egg, lightly beaten
- 2 tablespoons honey
- 1 teaspoon fresh thyme leaves, finely chopped
- 1/4 teaspoon lemon zest
- Pinch of sea salt
Instructions:
- Unfold the puff pastry on a lightly floured surface and gently roll it out slightly.
- Cut the puff pastry into 24 equal squares.
- Place the puff pastry squares on a baking sheet lined with parchment paper. Top each square with a cube of brie and a sprinkle of chopped cranberries.
- Brush the edges of each pastry square with the beaten egg.
- Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, or until the pastry is golden brown and the brie is melted and bubbly.
- Whisk together the honey, thyme leaves, lemon zest, and salt in a small bowl. Warm gently if desired.
- Let the bites cool slightly on the baking sheet. Drizzle generously with the honey-thyme mixture and serve immediately.
