Ingredients:
- 1 ¼ cups (150g) all-purpose flour
- ½ teaspoon salt
- ½ cup (113g) unsalted butter, chilled and diced
- 2-4 tablespoons ice water
- 1 cup (200g) granulated sugar
- ½ cup (100g) light corn syrup
- ¼ cup (60ml) bourbon
- 3 large eggs
- 2 tablespoons (30g) unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 ½ cups (150g) pecan halves
Instructions:
- Combine the flour and salt in a bowl.
- Cut in the butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until the dough forms.
- Shape the dough into a disc, wrap it in plastic, and chill for at least 30 minutes.
- Flour the surface and roll out the chilled dough to fit the pie pan.
- Place the dough in the pie pan and trim excess.
- In a bowl, whisk together granulated sugar, corn syrup, bourbon, eggs, melted butter, and vanilla extract until smooth.
- Stir in the pecan halves until well coated.
- Preheat the oven to 350°F (175°C).
- Pour the pecan mixture into the prepared pie crust.
- Bake in the preheated oven for 50-60 minutes, or until the filling is set and slightly puffed.
- Allow the pie to cool completely on a wire rack before slicing.
