Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1/4 cup full-fat sour cream
  • 1 tbsp ranch seasoning powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tsp Worcestershire sauce
  • 4 brioche buns
  • 4 slices sharp cheddar cheese
  • 4 leaves butter lettuce
  • 1 beefsteak tomato
  • 1/4 cup mayonnaise

Instructions:

  1. In a large bowl, combine the ground beef, sour cream, ranch seasoning, salt, pepper, and Worcestershire sauce. Fold the ingredients together by hand until just combined; do not over-mix.
  2. Divide the mixture into 4 equal portions. Shape into patties approximately 3/4 inch (2cm) thick and create a small indentation in the center of each with your thumb.
  3. Heat a cast iron skillet over medium-high heat. Sear patties for 3–4 minutes per side without moving them to develop a crust.
  4. During the final minute of cooking, place a slice of cheese on each patty and cover the pan with a lid for 30 seconds to melt the cheese.
  5. Remove burgers from the pan and let them rest for 3 minutes.
  6. Assemble by toasting the brioche buns and topping the patties with mayonnaise, lettuce, and tomato slices.
