Ingredients:

  • 1.5 kg boneless, skinless chicken thighs
  • 1 tsp Kosher salt
  • 0.5 tsp coarse black pepper
  • 1 tsp smoked paprika
  • 500 ml low-sodium chicken stock
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary, crushed
  • 4 cloves garlic, smashed
  • 1 medium yellow onion, finely diced
  • 3 tbsp cornstarch
  • 3 tbsp cold water
  • 30 g unsalted butter

Instructions:

  1. Place the finely diced yellow onions and smashed garlic at the bottom of the slow cooker. Note: This creates a rack so the chicken doesn't sit directly on the heating element.
  2. Pat the 1.5 kg chicken thighs completely dry with paper towels.
  3. Season both sides of the chicken evenly with 1 tsp kosher salt, 0.5 tsp coarse black pepper, and 1 tsp smoked paprika. until every piece is well coated.
  4. Arrange the seasoned chicken in the slow cooker over the bed of onions.
  5. Whisk 500 ml chicken stock, 2 tbsp Worcestershire, 1 tbsp soy sauce, 1 tsp dried thyme, and 1 tsp crushed rosemary in a bowl.
  6. Pour the mixture over the chicken. Cover and cook on 'Low' for 6 hours until the meat falls apart with a fork.
  7. Remove the chicken to a plate and shred into large chunks using two forks.
  8. Whisk 3 tbsp cornstarch with 3 tbsp cold water in a small cup.
  9. Stir the slurry into the hot cooker liquid. until the sauce visibly thickens and bubbles.
  10. Add 30 g unsalted butter, stir until melted, then return the chicken to the pot to toss and coat.
