Ingredients:
- 1 pound (450g) lean ground turkey
- 1 tablespoon olive oil (15ml)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon chili powder (7g)
- 1 teaspoon cumin (2g)
- 1 teaspoon paprika (2g)
- Salt and pepper, to taste
- 1 head of Romaine lettuce or butter lettuce, leaves separated
- 1 cup (240ml) fresh salsa
- ½ cup (120ml) Greek yogurt or light sour cream (optional)
- ¼ cup (30g) shredded cheese (optional)
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté until translucent (about 3-4 minutes). Stir in minced garlic and cook for an additional minute until fragrant.
- Add ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked (about 7-10 minutes), ensuring no pink remains.
- Sprinkle in chili powder, cumin, paprika, salt, and pepper. Stir well to coat the turkey evenly; cook for an additional 2 minutes.
- Spoon turkey filling into lettuce leaves and top with fresh salsa and yogurt or cheese as desired.
- Serve immediately, garnished with additional salsa if desired.
