Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken thighs, cut into strips
  • 1 tablespoon olive oil (15 ml)
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and minced (optional)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Shredded cheddar cheese (optional)
  • Sour cream or Greek yogurt (optional)
  • Avocado slices (optional)
  • Chopped cilantro (optional)
  • Lime wedges (optional)

Instructions:

  1. Slice chicken, bell peppers, and onion. Mince garlic and jalapeño (if using).
  2. Combine all fajita seasoning ingredients in a small bowl.
  3. Toss the chicken strips with 2 tablespoons of the fajita seasoning. Reserve remaining seasoning.
  4. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through (internal temperature 165°F/74°C). Remove chicken from skillet and set aside.
  5. Add bell peppers and onion to the skillet. Cook until softened and slightly charred, about 5-7 minutes.
  6. Add garlic and jalapeño (if using) to the skillet and cook for 1 minute more, until fragrant.
  7. Return the cooked chicken to the skillet with the vegetables. Sprinkle with the remaining fajita seasoning. Toss to combine.
