Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken thighs, cut into strips
- 1 tablespoon olive oil (15 ml)
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 jalapeño pepper, seeded and minced (optional)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ¼ teaspoon cayenne pepper (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Shredded cheddar cheese (optional)
- Sour cream or Greek yogurt (optional)
- Avocado slices (optional)
- Chopped cilantro (optional)
- Lime wedges (optional)
Instructions:
- Slice chicken, bell peppers, and onion. Mince garlic and jalapeño (if using).
- Combine all fajita seasoning ingredients in a small bowl.
- Toss the chicken strips with 2 tablespoons of the fajita seasoning. Reserve remaining seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through (internal temperature 165°F/74°C). Remove chicken from skillet and set aside.
- Add bell peppers and onion to the skillet. Cook until softened and slightly charred, about 5-7 minutes.
- Add garlic and jalapeño (if using) to the skillet and cook for 1 minute more, until fragrant.
- Return the cooked chicken to the skillet with the vegetables. Sprinkle with the remaining fajita seasoning. Toss to combine.
