Ingredients:

  • 4 flounder fillets (about 4-6 ounces each, 113-170 grams)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon kosher salt (5 g)
  • ½ teaspoon black pepper (2 g)
  • 1 teaspoon garlic powder (3 g)
  • Zest of 1 lemon
  • 4 tablespoons unsalted butter, softened (56 g)
  • 2 tablespoons fresh parsley, chopped (8 g)
  • 1 tablespoon fresh dill, chopped (4 g)
  • Juice of 1 lemon
  • Pinch of salt

Instructions:

  1. Preheat your broiler to high, positioning the rack about 6 inches from the heat source.
  2. In a mixing bowl, whisk together softened butter, herbs, lemon juice, and salt until well combined. Set aside.
  3. Place flounder fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season evenly with salt, pepper, garlic powder, and lemon zest.
  4. Place the seasoned fillets under the broiler. Cook for about 8-10 minutes, or until the fish is opaque and flakes easily with a fork.
  5. In the last minute of cooking, spoon the lemon herb butter over the fillets, allowing it to melt and caramelize slightly.
  6. Carefully remove from the oven and serve immediately, garnished with extra lemon wedges if desired.
