Ingredients:
- 3 ripe bananas (about 300g mashed)
- 1/3 cup (75g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon (5ml) vanilla extract
- 1 teaspoon (5g) baking soda
- Pinch of salt
- 1 1/2 cups (190g) all-purpose flour
- Optional: 1/2 cup (85g) chopped walnuts or pecans
- Optional: 1/2 cup (90g) chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the loaf pan or line with parchment paper for easier removal.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in melted butter into the mashed bananas until combined, then add beaten egg and vanilla extract; mix well.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture and stir just until combined; avoid overmixing.
- Fold in nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake in preheated oven for 60 minutes or until a toothpick inserted comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
