Ingredients:

  • 3 ripe bananas (about 300g mashed)
  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (5g) baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour
  • Optional: 1/2 cup (85g) chopped walnuts or pecans
  • Optional: 1/2 cup (90g) chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the loaf pan or line with parchment paper for easier removal.
  3. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  4. Stir in melted butter into the mashed bananas until combined, then add beaten egg and vanilla extract; mix well.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the banana mixture and stir just until combined; avoid overmixing.
  7. Fold in nuts or chocolate chips if desired.
  8. Pour the batter into the prepared loaf pan, smoothing the top.
  9. Bake in preheated oven for 60 minutes or until a toothpick inserted comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
