Ingredients:
- 8 Large Eggs
- 1 cup Full-Fat Cottage Cheese (4%)
- 1 teaspoon Cornstarch
- 1/2 teaspoon Kosher Salt
- 1/4 teaspoon Freshly Ground Black Pepper
- 1/2 cup Sharp Cheddar Cheese, finely shredded
- 2 tablespoons Fresh Chives, finely minced
- 1 teaspoon Unsalted Butter (for greasing, or cooking spray)
Instructions:
- Preheat your oven to 325°F (160°C). Thoroughly grease the cups of your 12-cup muffin tin with butter or cooking spray.
- Chop chives and shred cheddar cheese. Ensure any additional fillings (like bacon or mushrooms) are pre-cooked and drained.
- Add the eggs, cottage cheese, cornstarch, salt, and pepper into your blender or food processor.
- Blend on high speed for 30–60 seconds, or until the mixture is completely smooth and no lumps of cottage cheese remain. Stop and scrape down the sides if necessary. This step is crucial for the silky texture.
- Pour the blended mixture into a large bowl. Gently fold in the shredded cheddar cheese and minced chives until just combined.
- Carefully pour the mixture evenly into the 12 prepared muffin cups, filling each cup about three-quarters full.
- Bake for 20–22 minutes. The bites are done when they are puffed, the edges are set, and the centre is firm to the touch (like a perfectly set custard). Do not allow them to brown.
- Remove the bites from the oven and let them rest in the tin for 5 minutes. They will deflate slightly.
- Run a thin offset spatula around the edge of each bite before gently lifting them out. Serve warm or cool completely before storing in an airtight container.
