Ingredients:

  • 4 medium yams (approximately 1.5 lbs/680g), peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil (30ml)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup pure maple syrup (60ml)
  • 1 tablespoon unsalted butter (15g), melted
  • 1 teaspoon ground cinnamon (2g)
  • 1/2 teaspoon nutmeg (1g)
  • Optional: pinch of cayenne pepper for heat

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice the yams into 1-inch cubes. In a mixing bowl, combine the yam cubes with olive oil, salt, and pepper. Toss well to coat.
  3. Spread the coated yams evenly on a baking sheet. Roast in the preheated oven for 25-30 minutes, turning halfway through, until the yams are golden brown and tender.
  4. In a small bowl, whisk together the maple syrup, melted butter, cinnamon, nutmeg, and cayenne (if using).
  5. Once roasted, drizzle the maple glaze over the yams and toss to coat. Return to the oven for an additional 5 minutes to caramelize the glaze.
  6. Remove from oven, allow to cool slightly, then serve warm.
