Ingredients:
- 4 medium yams (approximately 1.5 lbs/680g), peeled and diced into 1-inch cubes
- 2 tablespoons olive oil (30ml)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/4 cup pure maple syrup (60ml)
- 1 tablespoon unsalted butter (15g), melted
- 1 teaspoon ground cinnamon (2g)
- 1/2 teaspoon nutmeg (1g)
- Optional: pinch of cayenne pepper for heat
Instructions:
- Preheat your oven to 425°F (220°C).
- Peel and dice the yams into 1-inch cubes. In a mixing bowl, combine the yam cubes with olive oil, salt, and pepper. Toss well to coat.
- Spread the coated yams evenly on a baking sheet. Roast in the preheated oven for 25-30 minutes, turning halfway through, until the yams are golden brown and tender.
- In a small bowl, whisk together the maple syrup, melted butter, cinnamon, nutmeg, and cayenne (if using).
- Once roasted, drizzle the maple glaze over the yams and toss to coat. Return to the oven for an additional 5 minutes to caramelize the glaze.
- Remove from oven, allow to cool slightly, then serve warm.
