Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup hot water
  • 1/2 teaspoon salt
  • 1 cup scallions, finely chopped
  • 2 tablespoons sesame oil
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Gradually add hot water, stirring until a dough forms.
  3. Knead the dough on a floured surface until smooth, about 5 minutes.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. In a separate bowl, mix chopped scallions with sesame oil and black pepper.
  6. Divide the rested dough into four equal pieces.
  7. Roll one piece into a thin circle (about 8 inches in diameter).
  8. Spread a portion of the scallion filling evenly over the rolled dough.
  9. Roll the dough up like a jelly roll, then coil it into a spiral shape.
  10. Flatten gently with your palm, then roll out again into a circle.
  11. Heat vegetable oil in a skillet over medium heat.
  12. Fry each pancake for about 3-4 minutes on each side, until golden brown and crispy.
  13. Drain on paper towels and keep warm.
  14. Slice the pancakes into wedges and serve hot with soy sauce or your favorite dipping sauce.
