Ingredients:
- 2 cups all-purpose flour
- 1/2 cup hot water
- 1/2 teaspoon salt
- 1 cup scallions, finely chopped
- 2 tablespoons sesame oil
- 1/4 teaspoon black pepper
- Vegetable oil, for frying
Instructions:
- In a mixing bowl, combine flour and salt.
- Gradually add hot water, stirring until a dough forms.
- Knead the dough on a floured surface until smooth, about 5 minutes.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- In a separate bowl, mix chopped scallions with sesame oil and black pepper.
- Divide the rested dough into four equal pieces.
- Roll one piece into a thin circle (about 8 inches in diameter).
- Spread a portion of the scallion filling evenly over the rolled dough.
- Roll the dough up like a jelly roll, then coil it into a spiral shape.
- Flatten gently with your palm, then roll out again into a circle.
- Heat vegetable oil in a skillet over medium heat.
- Fry each pancake for about 3-4 minutes on each side, until golden brown and crispy.
- Drain on paper towels and keep warm.
- Slice the pancakes into wedges and serve hot with soy sauce or your favorite dipping sauce.
