Ingredients:

  • 1.5 lbs turkey tenderloin
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 3 tablespoons unsalted butter
  • 4 cloves garlic
  • Zest and juice of 1 lemon
  • 1 tablespoon fresh parsley

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, thyme, rosemary, garlic powder, salt, and pepper.
  3. Coat the turkey tenderloin with the herb mixture, ensuring an even coverage.
  4. Place the turkey on a baking tray and roast in the preheated oven for 25-30 minutes.
  5. While the turkey is roasting, melt butter in a pan over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  6. Stir in lemon zest and juice, cooking for another 1-2 minutes.
  7. Check that the internal temperature reaches 165°F (74°C); remove from oven and let rest for 5 minutes.
  8. Slice the turkey and drizzle with the garlic lemon sauce. Garnish with fresh parsley.
