- 2 cups (240g) all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 3/4 cup (90g) grated sharp cheddar cheese
- 1/2 cup (60g) crumbled feta cheese
- 1/4 cup (60ml) whole milk
- 2 large eggs
- 1/4 cup (60ml) olive oil
- 1/4 cup (15g) chopped fresh herbs (e.g., parsley, chives, or thyme)
Instructions:
- Preheat oven to 375°F (190°C) and grease the muffin tin or line with paper liners.
- In a large bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder.
- Fold in the grated cheddar and crumbled feta until evenly distributed.
- In a separate bowl, combine milk, eggs, and olive oil. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients; stir gently until just combined.
- Add the chopped herbs and fold until just incorporated. Do not over-mix.
- Divide the batter evenly into the muffin tin (about 3/4 full).
- Bake for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
