  • 2 cups (240g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 3/4 cup (90g) grated sharp cheddar cheese
  • 1/2 cup (60g) crumbled feta cheese
  • 1/4 cup (60ml) whole milk
  • 2 large eggs
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (15g) chopped fresh herbs (e.g., parsley, chives, or thyme)

Instructions:

  1. Preheat oven to 375°F (190°C) and grease the muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder.
  3. Fold in the grated cheddar and crumbled feta until evenly distributed.
  4. In a separate bowl, combine milk, eggs, and olive oil. Whisk until smooth.
  5. Pour the wet ingredients into the dry ingredients; stir gently until just combined.
  6. Add the chopped herbs and fold until just incorporated. Do not over-mix.
  7. Divide the batter evenly into the muffin tin (about 3/4 full).
  8. Bake for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
  9. Allow to cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
