Ingredients:

  • 1 cup of kale, stemmed and chopped (about 70g)
  • 1 cup of Swiss chard, stemmed and chopped (about 40g)
  • 1 cup of spinach, roughly chopped (about 30g)
  • 2 tablespoons extra virgin olive oil (30ml)
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (1g)
  • Salt and pepper to taste
  • Juice of 1 lemon (about 15ml) (optional)
  • Grated Parmesan cheese for serving (about 30g) (optional)

Instructions:

  1. Wash and chop kale, Swiss chard, and spinach. Mince the garlic.
  2. Heat olive oil in a large sauté pan over medium heat. Add minced garlic and red pepper flakes; sauté until fragrant, about 30 seconds.
  3. Add the chopped kale to the pan, stirring well. Cook for 3-4 minutes until it begins to wilt.
  4. Stir in Swiss chard and cook for an additional 3 minutes. Finally, add spinach and cook for 2 minutes, until all greens are tender.
  5. Season with salt, pepper, and lemon juice to taste. Toss everything together for even distribution of flavors.
  6. Transfer to a serving dish and top with optional grated Parmesan cheese.
