Ingredients:
- 12 oz (340 g) bucatini pasta
- 1 tbsp salt (for pasta water)
- 4 oz (110 g) Chinese sausage, sliced thinly
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 cups seasonal greens (e.g., bok choy, spinach), chopped
- 1 red bell pepper, thinly sliced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 tsp black pepper
- 2 green onions, sliced (for garnish, optional)
- Sesame seeds (for garnish, optional)
Instructions:
- Bring a large pot of salted water to a boil. Add bucatini pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet or wok over medium heat, add vegetable oil. Add sliced Chinese sausage and cook until browned and crisp, about 3-4 minutes.
- Add minced garlic and diced onion. Sauté until fragrant, around 2 minutes.
- Add chopped seasonal greens and red bell pepper. Stir-fry until tender, about 3-4 minutes.
- Add cooked bucatini to the skillet. Drizzle soy sauce and sesame oil over the pasta. Toss well to combine.
- Season with black pepper and adjust seasoning to taste.
- Plate the sautéed bucatini and garnish with sliced green onions and sesame seeds if desired.
