Ingredients:

  • 12 oz (340 g) bucatini pasta
  • 1 tbsp salt (for pasta water)
  • 4 oz (110 g) Chinese sausage, sliced thinly
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups seasonal greens (e.g., bok choy, spinach), chopped
  • 1 red bell pepper, thinly sliced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp black pepper
  • 2 green onions, sliced (for garnish, optional)
  • Sesame seeds (for garnish, optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Add bucatini pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet or wok over medium heat, add vegetable oil. Add sliced Chinese sausage and cook until browned and crisp, about 3-4 minutes.
  3. Add minced garlic and diced onion. Sauté until fragrant, around 2 minutes.
  4. Add chopped seasonal greens and red bell pepper. Stir-fry until tender, about 3-4 minutes.
  5. Add cooked bucatini to the skillet. Drizzle soy sauce and sesame oil over the pasta. Toss well to combine.
  6. Season with black pepper and adjust seasoning to taste.
  7. Plate the sautéed bucatini and garnish with sliced green onions and sesame seeds if desired.
