Ingredients:

  • 2 lbs sweet potatoes, Garnet or Jewel varieties
  • 2 tbsp avocado oil
  • 1 tsp fine sea salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/8 tsp cinnamon

Instructions:

  1. Preheat your oven to 425°F (220°C). Peel the potatoes or leave skins on for added fiber. Slice the potatoes into uniform 3/4-inch cubes to ensure even cooking.
  2. In a large stainless steel mixing bowl, toss the cubed potatoes with the avocado oil, sea salt, black pepper, smoked paprika, garlic powder, and cinnamon until every surface is evenly coated.
  3. Spread the cubes onto a large rimmed baking sheet in a single layer, ensuring at least half an inch of space between pieces to avoid steaming.
  4. Slide the pan into the center rack of the oven. Roast for 20 minutes, then use a metal spatula to flip the potatoes.
  5. Continue roasting for another 5-10 minutes until the exterior is mahogany-brown and the edges are crisp.
