Ingredients:
- 2 lbs sweet potatoes, Garnet or Jewel varieties
- 2 tbsp avocado oil
- 1 tsp fine sea salt
- 1/2 tsp cracked black pepper
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/8 tsp cinnamon
Instructions:
- Preheat your oven to 425°F (220°C). Peel the potatoes or leave skins on for added fiber. Slice the potatoes into uniform 3/4-inch cubes to ensure even cooking.
- In a large stainless steel mixing bowl, toss the cubed potatoes with the avocado oil, sea salt, black pepper, smoked paprika, garlic powder, and cinnamon until every surface is evenly coated.
- Spread the cubes onto a large rimmed baking sheet in a single layer, ensuring at least half an inch of space between pieces to avoid steaming.
- Slide the pan into the center rack of the oven. Roast for 20 minutes, then use a metal spatula to flip the potatoes.
- Continue roasting for another 5-10 minutes until the exterior is mahogany-brown and the edges are crisp.
