Ingredients:

  • 1 head of garlic
  • 1 tablespoon olive oil, plus more for drizzling
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (120ml) plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon chopped fresh thyme
  • 1/4 teaspoon red pepper flakes (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Slice off the top of the garlic head. Drizzle with olive oil, sprinkle with salt and pepper, and wrap tightly in foil.
  2. Place the wrapped garlic on a baking sheet and roast for 45 minutes, or until the cloves are soft and golden brown.
  3. Remove from oven and let cool slightly before handling.
  4. Once cooled, squeeze the roasted garlic cloves into a small bowl. Mash with a fork until smooth.
  5. In a mixing bowl, beat the softened cream cheese and Greek yogurt until smooth and creamy.
  6. Add the mashed roasted garlic, lemon juice, parsley, chives, thyme, and red pepper flakes (if using) to the cream cheese mixture.
  7. Beat until all ingredients are well combined.
  8. Taste and adjust seasonings as needed. Add more salt, pepper, or lemon juice to your liking.
  9. Cover and refrigerate for at least 30 minutes to allow the flavours to meld. Serve this flavorful garlic dip with your favourite dippers.
