Ingredients:
- 1 head of garlic
- 1 tablespoon olive oil, plus more for drizzling
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 8 ounces (225g) cream cheese, softened
- 1/2 cup (120ml) plain Greek yogurt
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
- 1 teaspoon chopped fresh thyme
- 1/4 teaspoon red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C). Slice off the top of the garlic head. Drizzle with olive oil, sprinkle with salt and pepper, and wrap tightly in foil.
- Place the wrapped garlic on a baking sheet and roast for 45 minutes, or until the cloves are soft and golden brown.
- Remove from oven and let cool slightly before handling.
- Once cooled, squeeze the roasted garlic cloves into a small bowl. Mash with a fork until smooth.
- In a mixing bowl, beat the softened cream cheese and Greek yogurt until smooth and creamy.
- Add the mashed roasted garlic, lemon juice, parsley, chives, thyme, and red pepper flakes (if using) to the cream cheese mixture.
- Beat until all ingredients are well combined.
- Taste and adjust seasonings as needed. Add more salt, pepper, or lemon juice to your liking.
- Cover and refrigerate for at least 30 minutes to allow the flavours to meld. Serve this flavorful garlic dip with your favourite dippers.
