Ingredients:

  • 1 lb (450g) fresh broccoli florets, cut into bite-sized pieces
  • 2 tbsp (30ml) extra virgin olive oil
  • 3 cloves (15g) garlic, minced
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) freshly ground black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). In a large bowl, combine the broccoli florets, olive oil, minced garlic, salt, and pepper. Toss vigorously until every nook and cranny of the florets is glistening with oil.
  2. Spread the broccoli in a single layer on a prepared baking sheet. Ensure the florets are not touching to allow for maximum air circulation.
  3. Roast for 15–20 minutes until the tips of the florets turn a dark, toasted brown and the stems are fork-tender.
  4. Remove from the oven immediately to stop the cooking process and maintain crispness.
