Ingredients:

  • 1 lb broccoli florets, cut into bite-sized pieces
  • 1 lb cauliflower florets, cut into bite-sized pieces
  • 2 medium carrots, peeled and sliced into 1/4 inch coins
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C). Ensure all vegetables are cut into uniform sizes, roughly 1 inch.
  2. Toss the broccoli, cauliflower, and carrots in a large bowl. Drizzle the olive oil over the top and sprinkle in the garlic powder, salt, pepper, and paprika. Fold the vegetables until every floret is evenly coated.
  3. Spread the vegetables onto a baking sheet in a single layer with visible space between the pieces. Roast for 20 to 30 minutes, tossing once halfway through, until the edges are charred and mahogany-colored.
