Ingredients:
- 1 lb broccoli florets, cut into bite-sized pieces
- 1 lb cauliflower florets, cut into bite-sized pieces
- 2 medium carrots, peeled and sliced into 1/4 inch coins
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C). Ensure all vegetables are cut into uniform sizes, roughly 1 inch.
- Toss the broccoli, cauliflower, and carrots in a large bowl. Drizzle the olive oil over the top and sprinkle in the garlic powder, salt, pepper, and paprika. Fold the vegetables until every floret is evenly coated.
- Spread the vegetables onto a baking sheet in a single layer with visible space between the pieces. Roast for 20 to 30 minutes, tossing once halfway through, until the edges are charred and mahogany-colored.
