Ingredients:
- 1 lb (450g) fresh broccoli florets, cut into bite-sized pieces
- 2 tbsp (30ml) extra virgin olive oil
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) cracked black pepper
- 1/2 cup (50g) freshly grated Parmesan cheese
- 1 tsp (3g) garlic powder
- 1/2 tsp (1g) smoked paprika
- 1/4 tsp (0.5g) red pepper flakes
Instructions:
- Briefly steam the broccoli florets for 3–4 minutes until bright green and slightly tender but not soft.
- Pat the florets dry with a paper towel to remove surface moisture.
- Place the florets on a parchment-lined baking sheet and use the bottom of a glass to press down on each floret until flattened to about 1/2 inch thick.
- Drizzle the olive oil evenly over the smashed bites, ensuring the edges are well-coated.
- Whisk together parmesan, garlic powder, paprika, salt, pepper, and red pepper flakes in a small bowl; sprinkle the mixture generously over each broccoli bite, pressing slightly to adhere.
- Bake at 400°F (200°C) for 12–15 minutes.
- Remove from the oven once edges are mahogany-colored and the cheese has formed a golden-brown, crisp lace.
