Ingredients:

  • 8 ounces (225g) cream cheese, softened
  • ½ cup (120ml) sour cream
  • ½ cup (120ml) mayonnaise
  • ½ cup (120ml) Russian or Thousand Island dressing
  • 1 teaspoon Worcestershire sauce
  • 8 ounces (225g) cooked corned beef, finely chopped
  • 1 cup (100g) sauerkraut, drained and squeezed dry
  • 1 cup (100g) shredded Swiss cheese, divided (reserve ¼ cup for topping)
  • 2 tablespoons chopped fresh chives or green onions, for garnish (optional)
  • Rye bread, crackers, or vegetables, for serving

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, Russian dressing, and Worcestershire sauce. Mix until smooth and well combined.
  3. Add the chopped corned beef, sauerkraut, and ¾ cup of the shredded Swiss cheese to the cream cheese mixture. Stir until evenly distributed.
  4. Pour the mixture into the prepared baking dish. Sprinkle the remaining ¼ cup of Swiss cheese evenly over the top.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the dip is heated through.
  6. Remove from the oven and garnish with chopped chives or green onions (if using). Serve immediately with rye bread, crackers, or vegetables.
