Ingredients:
- 4 large whole wheat tortillas (10-inch or 25 cm)
- 1 cup (240g) hummus (store-bought or homemade)
- 1 cup (130g) shredded carrots
- 1 cup (150g) cucumber, thinly sliced
- 1 cup (150g) bell peppers (red, yellow, and green), thinly sliced
- 1 cup (50g) baby spinach or lettuce
- Optional: 1/2 cup (70g) cherry tomatoes, halved
- 1 tablespoon (15ml) olive oil
- 1 tablespoon (15ml) lemon juice
- Salt and pepper to taste
Instructions:
- Wash and dry all vegetables.
- Shred carrots and slice cucumbers and bell peppers.
- Lay out each tortilla and spread 1/4 cup (60g) of hummus evenly over each tortilla using a spatula or butter knife.
- In a line across the center of each tortilla, layer shredded carrots, cucumber slices, bell pepper strips, and baby spinach.
- Starting from one edge, tightly roll the tortilla over the fillings to create a wrap. Tuck in the sides as you roll to keep the filling contained.
- Cut each wrap in half diagonally and serve immediately or wrap in plastic wrap for packing.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over wraps if desired.
