Ingredients:

  • 4 large whole wheat tortillas (10-inch or 25 cm)
  • 1 cup (240g) hummus (store-bought or homemade)
  • 1 cup (130g) shredded carrots
  • 1 cup (150g) cucumber, thinly sliced
  • 1 cup (150g) bell peppers (red, yellow, and green), thinly sliced
  • 1 cup (50g) baby spinach or lettuce
  • Optional: 1/2 cup (70g) cherry tomatoes, halved
  • 1 tablespoon (15ml) olive oil
  • 1 tablespoon (15ml) lemon juice
  • Salt and pepper to taste

Instructions:

  1. Wash and dry all vegetables.
  2. Shred carrots and slice cucumbers and bell peppers.
  3. Lay out each tortilla and spread 1/4 cup (60g) of hummus evenly over each tortilla using a spatula or butter knife.
  4. In a line across the center of each tortilla, layer shredded carrots, cucumber slices, bell pepper strips, and baby spinach.
  5. Starting from one edge, tightly roll the tortilla over the fillings to create a wrap. Tuck in the sides as you roll to keep the filling contained.
  6. Cut each wrap in half diagonally and serve immediately or wrap in plastic wrap for packing.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over wraps if desired.
