Ingredients:

  • 4 ears of fresh corn on the cob
  • 2 tablespoons unsalted butter
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 lime, juiced
  • 1/2 cup crumbled Cotija cheese or feta cheese
  • 2 tablespoons chopped fresh cilantro (optional)
  • Extra chili powder or paprika for garnish

Instructions:

  1. Remove husks and silk from the corn.
  2. Boil in a pot of salted water for 5-7 minutes OR grill on medium heat for about 10-15 minutes, turning occasionally until tender and slightly charred.
  3. In a mixing bowl, combine mayonnaise, sour cream, chili powder, garlic powder, and lime juice. Mix until smooth.
  4. After cooking, brush the corn with melted butter and evenly coat with the sauce mixture.
  5. Sprinkle crumbled Cotija cheese over the sauced corn, followed by cilantro and a dash of chili powder.
  6. Enjoy hot as a delicious side dish!
