Ingredients:
- 4 ears of fresh corn on the cob
- 2 tablespoons unsalted butter
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 lime, juiced
- 1/2 cup crumbled Cotija cheese or feta cheese
- 2 tablespoons chopped fresh cilantro (optional)
- Extra chili powder or paprika for garnish
Instructions:
- Remove husks and silk from the corn.
- Boil in a pot of salted water for 5-7 minutes OR grill on medium heat for about 10-15 minutes, turning occasionally until tender and slightly charred.
- In a mixing bowl, combine mayonnaise, sour cream, chili powder, garlic powder, and lime juice. Mix until smooth.
- After cooking, brush the corn with melted butter and evenly coat with the sauce mixture.
- Sprinkle crumbled Cotija cheese over the sauced corn, followed by cilantro and a dash of chili powder.
